In addition to volume, think about fin size.

Whatever board you get, if you can dig up a monster beater fin
for cheap, use it when practicing.

Reason: At first, you'll tend to push the tail too much when
water starting, which will weathercock the board - causing your
water start to fail.   A bigger fin helps noticeably to resist
this tendency.
